17 Healthy Barbecue Sides and Salads

Do we call it barbecue or grilling out? Either way, these recipes are perfect for outdoor summertime get-togethers. Below, you’ll find a collection of my best summer side dishes for cookouts. You’ll find all kinds of salads, from pasta salad to potato salad to slaw, plus fun dips and appetizers.
All of these recipes are simple, fresh, and guaranteed to lighten up grilled main dishes. They’re meatless and relatively healthy, and their lively flavors will round out your meal. Many are vegan and/or gluten-free, so they’re well-suited to special diets.

7) Mediterranean Couscous Salad with Raw Squash and Feta

I added a finely diced bell pepper and subbed in a cucumber for the zucchini, because that is what the garden had to offer. 8) Mediterranean Bean Salad

“I made this bean salad last night for my fiance and I to have as a quick thing to grab for lunch in the morning and it is SO GOOD. I even forgot to put in the red pepper flakes and the garlic and it was still nuts. I made it in a hurry before we were supposed to meet a friend for dinner and we ended up huddled over the bowl with an open box of pita chips anyway haha. I am not a vegetarian but try to eat non-processed foods that are super nutritious . This side fits the bill and I will be bringing to my next gathering.

I’m planning Ribs for tomorrow and all the sides I’ve looked up aren’t really…healthy. I’m not a health nut (or I wouldn’t be making Ribs!), but I try. I’m making a mac & cheese with marscapone and sun dried tomatoes and a vinegar based potato salad, but I wanted a full on totally VEGETABLE dish that will compete with all the carbs in the salads. I found the one I want to make, the Greek Broccoli Salad. Thank you!

Hi dear Kate from Australia. It is our winter here now and we are pretty cool at 17 degrees days. (Bit different to the USA winter). I have made a number of your recipes over the years, they are always delicious and easy. Just have to change weights to metric. Both hubby and I are vege’s. One of my daughters is currently at Uni, she would love to have fresh vegetables but after a couple of days they are no good. Can you freeze things like Zuchinnis, successfully? She is on very limited income and lives in a Uni dorm.
Hi Bev, thank you for your comment! The frozen vegetable section is always a great option to use for roasted dishes. Zucchini can freeze, but I haven’t tried it in anything other than a smoothie. Or, freeze part of a meal if there is extra to have later. I hope this helps!

sandwich. Any ideas? We have had the portabello bbq sandwich from Joe’s bbq but I am not 100% sure it is vegetarian. Have you had it? Could you help me replicate it?
