This was really helpful! Can’t wait to bake the almond cake for mother’s day!
How did it go, Suzan? What did you think?
Absolutely delicious! I ended up not adding rhubarb and just went with strawberries but it turned out just as good.

I love your recipes, but the word is sneaked. Snuck is just wrong!
Hi Kate! Long time lurker, first time commenter. I love your recipes – your crispy baked tofu, extra veggie fried rice, peanut dip, and healthy carrot muffins are all staples in my house.
I have a (mother’s day, but really every day) request – I love onion rings, and would love a recipe for a healthy version. The recipes I’ve tried have been disappointing. Would you consider posting one?
And even if onion rings leave you cold – thank you so much for your great blog. I recommend it to everyone.
Thank you so much for your kind words, Emer! I’m so glad you’ve been enjoying my recipes. :) I do love some good onion rings. I’ve tried some baked versions and been disappointed as well! I will add them to my list and hope I can come up with a recipe worth sharing.
Absolutely love your recipes Kate! They have changed my life – cooking your plant based recipes are such a delight, full of colour, texture and flavour. I never thought eating vegetarian could be such a delight! thank you so much :) Jane
Surprised my mom with your homemade blueberry muffins this morning (she went out for a walk at 7am and I woke up just after her to prepare them). Theyโre one of her favourites :)
Great post Kate. I love your recipes. I can’t wait to try the Roasted & Raw Carrot Salad with Avocado this weekend.
