Hi Trex! This is hardly a recipe, but I’m currently loving cold sparkling water (Mountain Valley brand) with the juice of a whole lime, plus a chili-salt rim (Frontier Co-op or Tajin). Sometimes I add a few slices of cucumber or a sprig of fresh mint. You might also like my Refreshing Hibiscus Mocktail or Pink Drink.

I thought they were awful. I never tried another gimlet until I saw this simple recipe with London gin and real lime juice. This gimlet is light and bright just as Kate says, refreshing and delicious. It was a bit too sweet for me as written, but easily fixed by using less syrup. I think I’ll be consuming more lime juice and less tonic with my gin this summer!

After our daughter and her mom friends from Lawrence made a trip to Greece, we planted Greek basil. It has an intense basil taste which really improves the cocktails.

We normally use the honey syrup as opposed to white sugar syrup. We also have mint syrup and occasionally use it. We keep brown sugar syrup but it is too intense for the cocktails.

As for gin, we use Costco gin.

As for proportions, we are closer to 2-1-1 than 4-2-1. But vary based on the acidity of the limes.

As usual, this recipe and the explanation and illustrations, are top rate!
