Today, I’m sharing a collection of my favorite gluten-free dinner recipes. I make these dinners for girls’ night since two of us are gluten-free. I complicate matters by being a vegetarian, so these recipes are also meatless.

The more restrictions, the more difficult menu planning can be, but I hope you’ll find plenty of inspiration below! You’ll see rice-based dishes, like risotto and Mexican meals, some creative quinoa dinners, hearty salads, quiche with an almond flour-based crust, and more. You can make a familiar meal without wheat; these recipes prove it.

Thai Green Curry with Spring Vegetables

This healthy, vegetarian Thai green curry features fresh asparagus, carrots and spinach! It’s full of flavor and simple enough for weeknight dinners. Feel free to substitute sliced snow peas for the asparagus if it’s not in season where you live. Recipe yields two large servings (as shown) or four small servings.

Creamy, delicious, healthier baked brown rice risotto with minimal stirring required! This recipe is designed for brown arborio/short grain brown rice so any grain substitutions will affect baking time. (White arborio rice will only need to be baked for 40 to 45 minutes.) Look for brown arborio/short-grain brown rice at well-stocked grocery stores or health food stores. Skip the wine if you don’t drink, but it adds a lovely depth of flavor.     I love this list Kate! I’m one of those ‘wonderful’ dinner guests who complicates things by being both gluten free and vegetarian (both for health reasons). It has certainly been an adjustment for my family and friends, and I find it hard sometimes to let people know because I don’t want to be a pain about it.
    I do love this list of delicious dinners that fit both my needs perfectly – now I can just direct them here if they ask for a little inspiration :)
    Also, I have more inspiration for dinners that aren’t just salad and quinoa ;)

    This may be a silly question, but do you have a resource that you use to make sure your recipes are gluten free? I’m too scared to call anything gluten free on my site since I’m never sure if there is gluten hidden somewhere that I’m unaware of!

      Certain things are easily recognized as GF (like rice or quinoa) and you’ll remember them as you go. Always double check if you even have a remote suspision. You’d be amazed at how many things have gluten (like some soy sauces for example). For my recipes I always Google “is (insert ingredient here) gluten free?” then read a few links to confirm. Kate do you have a better tip?

        Sami, that’s a great question and I’m glad you’re being so cautious with your dietary labels. I am pretty confident in my knowledge of gluten-free ingredients, but like Matt said, I research anything if I’m unsure. I also add a note at the end of every gluten-free recipes that requires a minor substitution or verification to be truly GF (like tamari soy sauce and white miso are usually, but not always, GF). I also add disclaimers to my special diet index pages that suggest that the readers always check my notes and double-check their ingredients. Even after all that, I added a nutrition disclaimer to my site (it’s at the very bottom) out of sheer paranoia. I do believe that it’s ultimately the reader’s responsibility to confirm that their recipe will suit their needs, but I do the very best I can to make this site a great resource!

    It’s amazing how easy it is to make amazing gluten-free recipes. While not GF myself, I do appreciate cutting down on simple carbs. I often surprise myself when a create a recipe, to find it was gluten-free without even trying! Oh and I like the reader description call outs. People take the time to comment on our recipes and work, so it’s nice to give a little extra credit.

      I’m with you, Matt! I emphasize whole grains on the blog and in my own diet because I’m hypoglycemic and really feel the effects of simple carbs (no good!). Most of the gluten-free recipes on my blog are gluten-free on accident and I love them just as much!

    Thanks for this post! I saw this on Pinterest and every recipe on the “20 Gluten Free Dinner Recipes” were right up my alley! Last night, I made your Thai Green Curry with Spring Vegetables (even though it’s not spring!) and it was FAB! I am usually a little bit hesitant about using receipes from blogs because I have run into too many bad ones but this one was a hit! I actually don’t have rice vinegar in my pantry but it was still great without. I use coconut aminos instead of soy sauce and it’s a good substitution. Another great thing about this group of recipes is that you can purchase ingredients that cross over into several of the other recipes โ€“ so I went to the store and got spinach, kale, sweet potatoes, black beans, pepitas, rice, avocados & lime and I’m set to experiment with a lot of these recipes for the next week! Thanks :)

Having special dietary needs can making enjoying delicious meals difficult if you do not know how to prepare them correctly. I would like to add that some restaurants have made huge strides when it comes to offering a varied menu that accommodates many needs such as gluten-free and vegetarian. If you do a little research in your area you are sure to find some high quality places you, your family, and closest friends can enjoy without having to prepare (or clean up!) a single thing.     Please be careful with quinoa if you are truly gluten sensitive or celiac, as the proteins in quinoa are similar enough to gluten to cause damage (the lectins), and there is so much cross contamination there as they are often times processed in the same facilities as grains.

    Please note that aspects of your dishes, such as soysauce, are NOT Gluten Free. For Celiac’s who get sick from gluten, this is a BIG problem. Otherwise I love your book – it was my favorite gift to give this Christmas!

        To be fair you can get gluten fee soy sauce so it’s not much of a problem. I was diagnosed with celiacs 4 years ago. You just gotta look around, heck you could just write “gluten free soy sauce”. :)
