Raise your hand if some random vegetables are going south in your kitchen. I’m raising my hand high over here. Here’s a collection of flexible recipes to reference when you have leftover veggies or greens in your fridge. Let’s save the vegetables!

My mom requested this roundup, and I hope it’s a handy resource for you, too. (Be sure to bookmark it.) You can always use the search bar at the top of the page to find recipes for a specific type of produce. I also have an ingredient index, which you can bookmark or access through the menu bar—hover over “all recipes” then “ingredient” then “view all”.

When I write recipes, I always try to include tips on how to “change it up”, which you can find in my recipe notes. In my cookbook, those tips turned into cute banners that you’ll see over the recipe photos. You can also skim the comments to learn how C+K readers have successfully changed the recipe. Please get creative with your vegetables and leave a comment on the recipe to share how it turned out!

    Oh god, I ALWAYS have random bits and ends of veggies left in my fridge, and it’s always a struggle trying to figure out what to do with them. I honestly can’t thank you ENOUGH (or maybe I should thank your mom for requesting this? ;-) ) for compiling together this awesome list – I will most definitely be bookmarking it and referring to it later (and probably many more times after that). I’m particularly intrigued by that Greek kale salad; I often find I’ll buy kale on a whim at the grocery store, then I have it sitting in my fridge and I have no idea what to do. No more of that! Excited to give many of these suggestions a try :-)

    Ah, there are so many awesome ideas here, just bookmarked this page . I always have left over veggies sitting in the fridge (carrots are the usual suspect because, for some reason, I always buy far too many carrots!) and they usually get thrown together as a soup during winter, and a salad during summer. But I’m always on the look out for added inspiration – left over veggie pizza is now on the top of my list!
