These chimichurri chickpeas are bold, hearty and zippy. This simple dish features tender chickpeas, crumbled feta cheese, and homemade chimichurri sauce. It’s ready in about fifteen minutes.

Chimichurri verde hails from Argentina and is typically served on steak, though I love it in many other preparations. It’s a bright herbed sauce made with fresh parsley, garlic, red onion, red pepper flakes, red wine vinegar, and olive oil.

While traditionally made with a mortar and pestle, my preparation method uses the food processor as much as possible, so it comes together very quickly.

You could call this recipe is a collision of leftovers or, better yet, a happy coincidence. This summer, we invited friends over to grill and I made my chimichurri sauce to go with our meal. I was thrilled when one of our friends took his first bite and demanded the recipe.

We had a bit of sauce leftover, so I stashed it in the refrigerator near some extra chickpeas. The combination proved fantastic once I added some creamy, tangy feta cheese.

While the sauce is Argentinean, this dish’s flavor profile is more recognizably Mediterranean. I love this lively side dish, and I hope you do, too.

Y’all know I’m from Oklahoma, right? I grew up eating cowboy caviar, also called Texas caviar. It’s a classic bean salad recipe popular in the South. You can serve it as a side salad or as salsa. Either way, people go crazy for cowboy caviar at potlucks.

Cowboy caviar is made with black-eyed peas and black beans, chopped tomatoes, corn, bell pepper, onion and cilantro tossed in tangy Italian dressing. I typically think of cowboy caviar as a warm weather salad, but it’s made with ingredients that are readily available year-round.

Cowboy caviar is actually perfect for New Year’s if you’re craving something fresh yet hearty, and trying to hit your black-eyed pea quota!

I have one issue with most cowboy caviar recipes—they’re often swimming in store-bought Italian salad dressing. As such, they can be way too oily and contain some unnecessary preservatives. Instead, I whisked together a simple, homemade Italian dressing from scratch. It’s easy to do and tastes fantastic.

This recipe yields a big bowl of dip, but I don’t think you’ll have any trouble polishing it off. I hope you enjoy this cheekily titled delight!

First recipe of 2017: My new favorite chickpea salad. It’s crisp and fresh, with lots of zip. I’ve been eating it straight from the bowl, and even used it as a protein-rich topping for some cheesy nachos the other night. That’s what I like to call a balanced meal.

I’m so glad I finally moved to a better kitchen. Now that I have an open, light-filled cooking space, I’ve found myself spontaneously creating recipes at dinnertime again. Stay tuned for more salads and soups soon. I’m so close to having an organized office space and a more regular posting schedule again.

I can’t take full credit for this one, though. I was immediately smitten with the original concept on Serious Eats. Loads of fresh dill? Say no more. I tinkered with their recipe quite a bit, like I do, to make it a delicious lunch or side made with canned chickpeas. Mine has chopped celery, green onions, and extra carrots.

I grated the carrots in my food processor, which reminded me—I recently learned that the sharp metal blade on my beloved food processor (and the machine that I have recommended for years) is at risk for breaking into pieces. Kinda dangerous. If you have a Cuisinart food processor, you can get a replacement blade here.

This lentil salad is beyond delicious. In fact, I was tempted to make it a last-minute cookbook addition instead, but decided you should get it right away. It’s a Greek-flavored alternative to classic lentil salad, and I hope you love it as much as I do.

The salad features black beluga lentils, which are my favorite lentils for salads. They’re called beluga lentils because they resemble caviar. I like them because they cook in about 25 minutes and retain their shape nicely.

As humble and inexpensive as they are, lentils are true super foods. They’re loaded with protein, fiber, iron, and more goodness. Their flavor is super earthy, so they go well with other strong, zippy flavors, like the bold red wine vinaigrette I used here. I added chopped spinach, sun-dried tomatoes, olives and herbs to round out the salad.

Can we talk about lunch today? Basic, necessary, weekday lunches? I work from home these days, but I learned a thing or two about packed lunches when I was commuting to an office job a few years ago. Even now, I like to keep my lunches really simple, for productivity’s sake.

To state the obvious, lunch is important. Skipping lunch altogether is not a viable option. Coworkers will start giving you funny looks when your head is on the desk and your stomach is growling for help. (I speak from experience.) Also, why skip a perfectly good excuse to eat?

You also can’t completely overdo it at lunch… well, you can, and I totally understand the desire to indulge after a miserable morning. Assuming that your human body functions similarly to my human body, however, choosing fast food with fries or mac and cheese will suck the energy right out of you.

Here’s how it goes: the grease, carbs and all that tasty, tasty salt will probably leave you feeling jazzed for about an hour. Then your eyelids will start to feel verrrrrry heavy. You’ll start fantasizing about crawling under your desk for a little nap. “Will anyone notice?” you’ll wonder. “Just for a few minutes…”
