Love this salad. Made it tonight with local watermelon and mint from my garden. We are in the south so I used pecans and toasted them in an iron skillet. I didn’t have pistachios handy.

Hi Kate! This salad sounds fantastic, but no watermelon around (I live in France, where we mostly get cantaloupes, the « Charentais » dark orange kind, you know?). Do you think I could use this French melon?

This salad is so good! It served as our main dish this evening. I used cinnamon basil from my back yard instead of the mint. The flavor is more subtle, but a nice complement.
