Potato selection: Look for potatoes that are clean, firm and relatively smooth. Avoid potatoes that are wrinkled, sprouting or have green spots.
Storage tips: Store in a cool, dark, well-ventilated location (not the fridge, which is too cold). Store them separately from onions and fruit, which contain ethylene gas that encourage the potatoes to sprout or shrivel.
Season: Potatoes are harvested in the fall, but with proper storage, they keep year-round.
