Hi Hilary, when I specify cane sugar in a recipe, you can rest assured it is needed. I use unrefined sugar when I can, but for brownies you only get the very best outcome with cane sugar.

I have a real PROBLEM with these brownies! ………..They are just to darn GOOD!!!! First ones made 12/20/24. Oh my ! Took some to my brother (LOVED them) a bachelor that doesn’t make sweets. Hubby Loved them. Me: I dream about these. So the PROBLEM arises because I have made 4 batches of these brownies in 17 days! The only reason I am not making another one today is because I am out of cocoa and had to order from Amazon which won’t come till tomorrow. We are in a small town in CO with limited grocery.

Oh and by the way the chocolate chip cookies are also on the PROBLEM list however, those are managed by keeping them frozen raw in the freezer and only baking a few at a time.

I appreciate all your detail that you give so I can reproduce your wonderful recipes.

I was able to turn them into three 9X13 pans of pumpkin (chunked, frozen, and then thawed, drained, and puréed) cheesecake brownie. I tripled your recipe for dry ingredients. They are delicious, and I can’t wait to get the crackly top when I get to make the original version with browned butter instead of the oil-saving version!

My partner is not big on sweets but he really likes brownies. I made these for him about 6 months ago, and he absolutely devoured them over a four day period. Highly unusual for him. As he cared for them so much, our 5 year anniversary is coming up, and I decided to make these again for him as a special treat. This recipe is exclusively for him, and I am making a different recipe for everyone else. Thanks for sharing it. I also truly enjoyed them, from the softer center to the flaky top. Delicious!
