I buy raw cashews in bulk, so I always have them on hand to make my own cashew butter. However, why does it have to be refrigerated? When I put it in the fridge it becomes so hard that it becomes very difficult to spread. I don’t keep roasted cashews in the fridge, so why this?

I have to say I was skeptical if it was going to come together without oil. I have a very basic very inexpensive food processor I was concerned that my processor wasn’t powerful enough. It required a little patience but it came together exactly as described in the recipe. The final result is creamy and delicious!

The point of this recipe is to avoid adding necessary oil. Using a food processor and toasting the cashews are key.
