In reply to Kanika Ajmera. Hi Kanika, almond flour is denser than wheat flour, so it will require other adjustments. Thumbprints are a classic recipe so you should be able to find a version with regular all-purpose flour easily that will have the appropriate measurements for other ingredients.

Absolutely love almond cookies, your recipe was delicious. I used a scale for the (King Arthur) flour but needed to add a bit more to get the mixture to stick together and used a 2 T scoop. I used St. Daldour Heritage Peach fruit spread that I had on the shelf (not refrigerated), it was a nice, light touch! Didn’t have almond extract but will try that next time. Thanks for sharing… everything I’ve tried from your blog is delicious and have turned into family favorites.

Hi Kate! I absolutely love your recipes! Fabulous flavor while still being wholesome. I have your book too. I tried these tonight. I weighed my flour in grams…I checked twice to be sure! The dough was very wet. After I added a decent amount of additional almond flour the dough was more play dough consistency. They turned out fab, but it might be worth double checking the weight. Thanks for making vegetarian eating delicious and fun!

I used 2/3 almond flour and 1/3 Gliten free flour. Perfectly delicious!

I made these for a festive cookie exchange at work, knowing that some of my coworkers were gluten-free. I thought I’d go ahead and make it vegan as well, substituting plant-based butter. They exceeded my expectations. Thank you for the detailed instructions that helped make sure they looked and tasted their best!

I will have to try these! I don’t eat gluten or sugars in general, but I might make an exception at Christmas… I have the perfect Amaretto Cherry jam to put in these!! So glad I found your page!!
