I have made this recipe abt 5 times and each time I add a little something extra (jalapeños, green onions, extra garlic to dressing) and it’s one of those side dishes, wrap filling or dip you can never go wrong. shared it with my trainer/ nutritionist and she’s making it at home herself.

I have been making Cowboy Caviar for years. The first time I made for an extended family party it was a huge hit. It was requested to be my dish for future family get togethers. Well, this summer for our family reunion I decided I wanted something healthier than what I traditionally made. I didn’t tell any one I changed it up and I waited to see if anyone noticed. I’ll just say this is my new requested recipe. This healthy change was a success! Thank you for sharing.

Made this as a quick dish at a get together. It was a hit. Some had it as a side dish others with chips. Husband used it in his wraps with sour cream, grilled chicken and sprinkled some queso blanco It was fabulous and easy to make.

Oh my gosh this was so good! I kept some jalapeno seeds in and used fresh lime juice instead of red wine vinegar and it was so fresh and aaaahmazing! Yum yum yum!

I’d never heard of Cowboy Caviar, but the recipe looked good, so I made it for a potluck. I put it in a big bowl, on top of arugula, with tortilla chips on the side. Everyone loved it, and there were no leftovers. I will definitely make this again – right now, in fact – because I have some ingredients left. Thanks!

so unbelievably good!! i used frozen corn & avocado and cherry tomatoes and will definitely be making again
